Born in the Dominican Republic and raised in the diverse landscape of New York City, he developed a profound passion for food and culinary arts at a very young age. Assisting his mother in the kitchen, Chef Plascensia quickly fell in love with rice-based dishes such as paella or risotto.
Chef Plascensia’s influence has played a pivotal part in shaping the success and reputation of Da Andrea, helping establish it as a distinguished fine dining destination in NYC.

Chef Leonardo

Chef Leonardo Pavia, 37, is a culinary master with nearly two decades of expertise. Originally hailing from Oaxaca, Mexico, he came to the US in 2000 and has since honed his skills to become an expert in Italian-French fusion cuisine. In 2022, Chef Pavia joined the Da Andrea team, quickly becoming integral to the restaurant’s operations.
He is celebrated for his exceptional talent in crafting unique and innovative dishes, where he artfully merges classic techniques with bold flavors to deliver unforgettable culinary experiences.
